Grilled Nectarines with Coconut Milk
Fruit is a nice ending to your dinner from the grill. Keep the grill on until you are ready to cook the nectarines. They only take several minutes. You can also make this dessert on a grill pan on your stove.
Makes 2 servings
2 firm nectarines, pits removed and cut in halves
1/4 cup honey
1/8 cup balsamic vinegar
1/4 teaspoon vanilla extract
1 can full-fat coconut milk (Chilled)

Slivered almonds
Mix the honey, vinegar, and vanilla together in a small bowl.
With cut sides up, brush the nectarines with some of the glaze. Put the cut sides down on the grill and cook until charred, about 3 minutes. Turn over and cook for several additional minutes.
Put 2 fruit halves in a bowl and brush with additional glaze. Serve with some coconut milk and slivered almonds.
