Pig Out Chocolates
A conversation started in our gym one day about paleo desserts. Is chocolate legal on the paleo food list? No, but we all have to enjoy an occasional cheat day and a really good piece of chocolate won’t derail you from your food goals.
Now be adventurous. Add some crispy bacon to a melted chocolate bar. I know, it sounds weird but it tastes so good. It is sweet, salty, and satisfying. Give a piece to someone to try. Most likely they won’t be able to identify the mystery ingredient but they’ll want more!
Directions:
Fry up two strips of bacon until very crispy. Drain and let cool. Crumble.
Melt two 3-ounce dark chocolate bars in a double boiler. Stir in some of the bacon bits. (I found that the best ratio is mostly chocolate with a sprinkling of bacon. You do not want the bacon to overpower the chocolate and make it too salty.) Pour into molds, or use a teaspoon and drop onto parchment paper. Place in refrigerator to harden.
