Deviled Eggs with Bacon

Breakfast on the run? Cook up some hard-boiled eggs and keep them in your refrigerator. They will stay fresh for about a week if the shell is not cracked; if it is cracked, they are good for about 4 days. Once you make up your deviled eggs, they will last 1-2 days in the refrigerator.

6 hard boiled eggs
3 strips of bacon, cooked crisp
1 tablespoon finely chopped onion
2 tablespoons olive oil
1 tablespoon apple cider vinegar
½ tablespoon lemon juice
½ teaspoon dry mustard
Sea salt
Pepper
Paprika
*Hot sauce (optional)

Peel the eggs, cut in half lengthwise, and put the yolks in a bowl. Crumble the bacon and add to the egg yolks along with the onion. Whisk together olive oil, vinegar, lemon juice, dry mustard, sea salt, pepper, and a dash of hot sauce. Add to eggs and mix with a fork. Scoop about 1 tablespoon into each egg white half. Sprinkle with paprika. You can serve the eggs with a side of salsa for extra punch.
