Tropical Banana Bars
Snack Attack

It’s Monday, and the Super Bowl snacks are gone. You have to be creative now, and energize yourself with some thing that fits into your diet. If you have looked at the paleo food list, you didn't see cookies and pretzels. So what do you eat in between your meals? The easiest solution is to grab a small handful of nuts and a piece of fruit, but there are other options. Make up some of these bananas and you'll have a stash of post-workout treats in your freezer. Let them thaw for a minute or so before you eat them.  

1 Banana

1 tsp. rum extract 
1 tsp. coconut extract
2 tsp. unsweetened coconut flakes
2 tsp. chopped pecans

Heat a small pan on stove. Add coconut flakes and pecans. Toast until lightly browned. (Watch closely or the mixture will burn.) Remove from pan. Cut banana in half lengthwise, and then cut each piece in half crosswise. Mix extracts together and brush onto cut sides of bananas. Dip the brushed sides into the coconut-nut mixture. Wrap and store in the freezer.

Note: You can use one or both of the extracts. (Extracts are not paleo, but one of the ingredients you can use to add a little more flavor. You could also brush the bananas with some coconut milk instead of the extract.)

Remember, you are cutting out your sugar addiction, so at first these types of foods might not seem satisfying. If you stick to your plan for several weeks, though, you’ll start to enjoy the more natural taste of fresh unsweetened produce.
