Chocolate Cherry Brownie Bites

Give yourself a treat now and then. I can’t live without chocolate, so I have been trying to come up with a few good staple recipes that can satisfy those chocolate urges. These bites are similar to my brownie recipe, but have a denser, moist texture. The “G” man gave them two thumbs up!

Makes 12

½ cup almond meal/flour
¼ cup organic unsweetened coconut
¼ cup chopped dates
¼ cup unsweetened cocoa powder
1 egg
2 tablespoon agave nectar
2 tablespoons coconut oil, melted and cooled
6 almonds, roughly chopped
¼ cup dried cherries

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

Combine flour, coconut, and dates in a food processor. Add cocoa, egg, agave nectar, and coconut oil and blend until combined. Add almonds and cherries and pulse just until mixed in. Spoon about 1 tablespoon of batter at a time onto prepared pan and sprinkle with additional coconut. Bake for about 7 minutes until set but soft in center.
