Asparagus with Walnut Chive Vinaigrette

Prepare this side dish to go with any grilled or baked meat that you have on hand for dinner. Prep time is only 15 minutes. One batch of the vinaigrette will be more than enough for one pound of asparagus. Save the rest to use as a dressing for your salads the next day.

1 pound asparagus, trimmed

2 tablespoons red wine vinegar
½  teaspoon agave nectar
2 tablespoons walnut oil*
¼ cup olive oil
¼ cup fresh chives, chopped
Sea salt and pepper

*Walnut oil is available in health food stores and some supermarkets. You need to store it in the refrigerator once it is open. It adds a nice mild nutty flavor to your salad dressings and sauces. (There are other recipes posted on the site that use this oil.)

Whisk together vinegar through chives. Season to taste with salt and pepper.

Cook asparagus in a large skillet filled with salted water for about 5 minutes, or until tender. Drain and return to skillet. Drizzle some of the prepared dressing over the asparagus and move around in the pan to coat thoroughly. Sprinkle with a little additional sea salt.
