Peach Barbeque Sauce

Try this quick sauce recipe from Bonappetit.com using the fresh peaches that are in season now.  Watch out for the adobo sauce: it has a real kick to it! Add gradually until you get the sauce to your desired heat level.

1 cup peaches, chopped and peeled (fresh or frozen)
½ organic no-sugar ketchup
2 tablespoons fresh lemon juice
2 garlic cloves, minced
1 ½ teaspoons adobo sauce from canned chipotle chiles in adobo
Sea salt and pepper
4 pieces of chicken

Combine the first four ingredients in a saucepan. Add half of the adobo sauce and taste for heat. Add additional sauce for a spicier sauce. Add salt and pepper and bring to a boil. Reduce heat and simmer for ten minutes or until peaches are soft. Remove pan from heat and let the mixture cool.

Marinate the chicken in half of the barbeque sauce for twenty minutes at room temperature or for up to eight hours in the refrigerator. Reserve the other half of the sauce in a separate bowl.

Grill the chicken, brushing with the marinating sauce as it cooks. Serve the extra sauce alongside your chicken as you serve it.
