Bacon and Banana Bites with Fresh Mango

I’m sure that you have had bacon wrapped dates. Bacon and fruit is a nice combination of flavors. You taste the saltiness of the meat along with the sweetness from the fruit. Here is a new twist on the original: use fresh bananas and mangos. You can serve these alongside your breakfast for a special treat, or cut them up and serve them as appetizers before dinner. A good accompaniment for this dish would be mango chutney. You can make your own. To make it paleo, substitute agave nectar for the brown sugar (adjusted to taste), and use coconut oil instead of the vegetable oil.

You will need:
2 ripe bananas, peeled, cut into 2” pieces
1 ripe mango, peeled, cut into 2” x ½” pieces
8 slices bacon
Curry powder
Toothpicks

Preheat a skillet to medium.

Place one piece of bacon on a board or plate. Put 1 piece of banana at one end, along with a piece of mango. Sprinkle the top of the banana, mango, and bacon with a little curry powder. Roll up the bacon tightly, beginning with the filled end. Place in the hot skillet with the end of the bacon facing down. Allow to brown for several minutes, and then gradually turn the rolls until the bacon is cooked on all sides. (Secure the rolls with toothpicks, if necessary.) Remove to paper towels to drain.

Serve the rolls immediately while they are hot and crisp.
