Banana Blueberry Pancakes

Make sure to try these pancakes. I think they are pretty delicious, especially for a leisurely laid-back Sunday morning.


Syrup:
1 pint of fresh or frozen blueberries (thawed)
¼ cup pure maple syrup

Reserve ¼ blueberries for pancakes. Put the rest in a small saucepan along with the maple syrup and bring to a boil on the stove. Turn the heat down to medium and cook for about 5 minutes. The blueberries will begin to soften and the syrup will reduce down. Turn off the heat.

Pancakes: (Makes 8)
¾ teaspoon of baking soda
½ teaspoon cinnamon
¾  cup almond meal/flour
2 eggs
1 teaspoon vanilla extract
1 ½ ripe bananas, mashed (overripe is even better)
1 tablespoon agave nectar
¼ cup blueberries
Oil spray, or coconut oil

Mix dry ingredients together, then add remaining ingredients and mix just until everything is blended together.

Brush a griddle with a little oil. Heat to medium and add ¼ cup batter per pancake. Cook until edges start to appear dry and the pancake appears to be set. Flip over and cook for several more minutes.

Serve pancakes with the blueberry syrup ... then go back to bed.
