Spinach and Fruit Smoothie

Green is good, especially in a smoothie. If you haven’t tried a spinach smoothie with fruit, you are missing a power packed breakfast option. Don’t let the color turn you off, the banana and orange in the recipe provide most of the taste and you cannot taste the spinach. Making a smoothie gives you a break from the stove, so it’s perfect for a summer meal. The egg is optional, but if you use very fresh organic eggs you do not need to worry about eating them raw, they will add needed protein. If you opt out for the egg, make a side of bacon, meat, or cooked eggs to round out your breakfast.

8 ounces of coconut or almond milk (refrigerated type)
Two large handfuls of fresh spinach
1 raw egg (optional)
1 banana
1 orange, peeled and cut up
2 teaspoons almond butter
½ teaspoon cinnamon

Add all ingredients to a blender and pulse until well combined. Add a handful of ice and process until completely blended.

Variations:
Use an apple or some mango instead of the orange
Add a little avocado for the fat instead of the nut butter
Use a few raw almonds instead of the nut butter. (Process these first, then add other ingredients.)
Add flaked organic coconut

This smoothie was a delicious breakfast. Even my husband really liked it. Just overlook the green because you never even know there is spinach in it.
