Another Summer Sweet Potato Salad

There are as many ways to make a potato salad, as there are ingredients that you love. This one is a nice combination of textures and tastes. The raisins add the sweetness, the ginger adds the spice, and the celery and onion add some crunch.

2 cups sweet potatoes, peeled and diced
½ cup raisins
2/3 cup diced Vidalia or red onion
1/3 cup diced celery
2 teaspoons grated ginger
½ cup homemade mayonnaise
1 tablespoon parsley, finely chopped
Sea salt and pepper

Put sweet potatoes into a pot of boiling water. Cook until just tender. Drain and cool completely. Soak raisins for about 15 minutes in water. Drain.

Combine potatoes and rest of ingredients. Season with salt and pepper. Chill for several hours before serving.
