Curried Stone Fruit Slaw

This is the prime season for fruits, especially nectarines, peaches, plums, and apricots. Pick up a selection of each and put together a “slaw” to serve along with fish or pork. Make sure you choose firm fruits that are just short of being completely ripe; they will be easier to slice. Julienne the fruit to make thin “matchsticks”. This recipe is a nice change from the typical fruit salsas, and looks great on the plate!

1 tablespoon grated peeled fresh ginger
1 tablespoon apple cider vinegar
1  tablespoon coconut vegetable oil
2 teaspoons agave nectar
1/4 teaspoon curry powder
1/8 teaspoon crushed red pepper flakes

5 pieces of unpeeled stone fruit
2 scallions, thinly sliced diagonally
Sea salt and freshly ground black pepper

Mix together the first six ingredients. Add the fruit and stir gently. Season with sea salt and pepper and garnish with the scallions.
