Thyme Scented Apples

This is a quick, easy side dish for the holidays. Serve it alongside your Thanksgiving turkey or chicken dinner. The hint of thyme compliments the poultry. 

1 tablespoon coconut oil
2 shallots, minced
3 large Granny Smith apples, peeled and sliced
1 tablespoon agave nectar
2 tablespoons apple cider vinegar
½ teaspoon fresh thyme, minced
Sea salt and pepper

Melt coconut oil in a skillet. Add the minced shallots and cook for one minute. Add the apples and cook until they are tender. Stir in the agave nectar, vinegar, and thyme. Heat until fragrant. Season with salt and pepper.
